This is a fun and quick recipe for a romantic dinner for two...four double scallops..six triple scallops. I've suggested places to buy products, but buy wherever you like but please by the freshest and if you can buy organic :). First I get the 3 cups of Chicken stock heating up. Cut up pancetta into small to medium sized chunks (Its a preference thing....). In a nice sized frying/sauce pan start browning pancetta. In the mean time....season scallops, dice the shallots and garlic. When Chicken stock is heated up to a boil turn down heat to simmer and slowly add polenta while whisking.
Take sip of wine to make sure its good!!
Take pancetta out and turn heat to medium high and add scallops. cook for 3 minutes on each side till they are white. In the meantime, add grated cheese to polenta and take off heat. When scallops are done take out of pan and turn heat down to simmer, add shallots, garlic and pancetta and saute for a few.
Its coming together really fast so tell everyone to sit in there places with there Sonata Bianco full up and get ready for this awesome meal. Now add cream, stir put scallops back in and tear tarragon an sprinkle over top. Plate it with a generous portion of creamy polenta long ways on the plates gently place scallops on the polenta and spoon all the creamy goodies on top.....Add some bigger tarragon leaves fall over (the plate) for presentation.
